This lentil nut roast doesn’t have any dairy and it’s quick and easy to make. This was featured in our vegetarian cooking class in Beloit SDA Church.
Lentil Nut Roast Ingredients:
Lentils, 1 cup
Nut meats, ½ cup (use more lentils if you can’t eat nuts)
Egg, 1
Milk, (8 oz) or use soy milk
Canola oil, ¼ cup
Corn Flakes crushed, 1 ½ cups
Sage, ½ teaspoon
Onion to taste
Salt to taste
Directions:
Boil lentils until done. Chop Nut meats. Beat the egg and add other ingredients to it. Put into greased baking dish. Bake 45 minutes (350 °F).
Yields 6 servings.
