WHIPPED GARLIC POTATOES
The following recipe was shared and demonstrated by Carol Van Arsdale at the Vegetarian Cooking Class at Beloit Church on Nov. 6, 2011
- 6 medium round red or white potatoes
- 6 cloves garlic (optional)
- Water from cooked potatoes
- ½ tub or more Better Than Sour Cream
- ½ teaspoon salt
Peel potatoes and cut into quarters. Cook in enough water to cover potatoes. Remove potatoes and put in a bowl.
Add a little potato water, some Better Than Sour Cream, and salt.
Mix with a potato masher or use an electric mixer and whip until smooth and fluffy. Add more sour cream as needed.
When you are ready to serve the potatoes, you can add 1-2 tablespoons of Earth Balance margarine or other non-hydrogenated.
